Introduction

So, I have to use up my okra, but don't have time to stand over a pot. Here is a slow-cooker version of gumbo. I didn't have any celery, so I put zucchini in instead. So, I have to use up my okra, but don't have time to stand over a pot. Here is a slow-cooker version of gumbo. I didn't have any celery, so I put zucchini in instead.
Number of Servings: 12

Ingredients

    4 skinless, boneless chicken breast halves
    3 (2oz) kielbasa links
    1 lb fresh okra, sliced
    3 cans tomatoes with jalapenos
    3 cups water
    2 small zucchini, sliced
    1 tbsp garlic powder
    1/4 tsp cayenne powder

Directions

Brown sausage in a skillet, slice into 1" slices. Add all ingredients to crockpot and cook 3-4 hours on HIGH (7-8 hours on LOW). Remove chicken and shred. Return chicken to crock. Serve 1 cup over 1/2 cup rice (not included in ingredients).

  • Simple and amazing! Left it to cook overnight and the chicken was so tender this morning...used andouille sausage instead of kielbasa and Rotel tomatoes w/ peppers for just the right amount of "kick" - this recipe's a keeper! - 2/25/11

  • I used turkey breasts instead of chicken andouille instead of kielbasa. Used minced garlic and 1/2 tsp of cayenne. Served with rice & corn bread muffins. I was amazed at how much people loved it. Will make again for sure. - 10/24/10
