Lighter Brown Sugar Cinnamon Sweet Potatoes

Number of Servings: 4

Ingredients

    3 medium sweet potatoes
    ~15 sprays of I Can't Believe It's Not Butter buttery spray
    ~1/4 cup (unpacked) brown sugar
    ~2 Tbsp. cinnamon

Directions

Peel the sweet potatoes and then slice them into approx. 1/2 inch thick rings. If your sweet potato is very fat, you may want to cut some of the large dics into semicircles. Put all of the sweet potato slices into a glass baking dish (you don;t have to do this carefully, but make sure they are reasonably evenly spread in the dish). Spray the tops with I Can't Belive It's Not Butter spray and then sprinkle with cinnamon and brown sugar. Cover with aluminum foil and bake in a 350 degree oven for about 30 minutes, or until sweet potatoes are tender. Uncover and continue baking about 15 more minutes so the edges get chewy.

Makes about 4 1-cup servings.

  • I make a similar dish. I have made it at every family get together at their request for 2 years. It is such an easy recipe. I do make some changes. I use 1/4 cup of splenda, no margarine or can't believe it's not butter spray (but good idea) and a tbsp of cinnamon. My kids even love it. - 10/9/10

  • These actually took almost twice teh time to be as tender as we like them (and we did cut them into about 1 cm thick medallions) but was great. The cinnamon really added a nice pump of flavor. - 1/7/10
