Taco Salad

Introduction

An easy tex-mex meal! An easy tex-mex meal!
Number of Servings: 8

Ingredients

    2 pounds perdue lean ground turkey
    1 cup reduced fat sour cream
    8 ounces fat free cream cheese
    1 cup think and chunky salsa
    1 cup low fat shredded cheddar cheese
    1 can yellow sweet corn
    1 bag lime tortilla chips




Directions

Preheat oven to 400 degrees. In a skillet, brown ground turkey on medium-high heat, set aside. In a separate pan combine sour cream, cream cheese, corn and salsa. In a baking dish, layer salsa mixture and seasoned ground turkey beginning with salsa mixture. Top with shredded cheese and place in 400 degree oven until cheese melts (10-15 minutes). Serve with lime chips - enjoy! (Makes 8 servings)

  • This was really good! I used 1 lb. ground turkey and added a can of black beans. I make a mexican dish every week because they are so tasty, healthy and simple. I've never made one creamy like this, but it was good. I will make it again and add more salsa. Its a keeper! - 5/13/08
