Grilled Chicken, Broccoli & Portabellas with Roasted Garlic

Number of Servings: 4

Ingredients

    4 Tbsp Olive Oil
    12 Cloves Garlic
    1 lb Boneless, Skinless Chicken Breast
    1 Head of Broccoli
    4 Large Portabella Mushrooms
    Seasonings to Taste

Directions

In large skillet heat olive oil and garlic over low heat until cloves are golden brown and very soft. Meanwhile, cut broccoli into large spears. Season chicken to taste and place on grill with broccoli and portabellas. Grill until broccoli is al dente, portabellas are tender and chicken is cooked through. Remove from grill and allow to cool for several minutes. When cool enough to handle, cut everything into bite sized pieces. When garlic is soft, mash up cloves in pan to disperse and add chicken, broccoli and portabellas. Cook over med-high heat just long enough to heat through. Also good with some honey mustart salad dressing mixed through, although not included in calorie count.
