Ingredients

*Potato, raw, 4 large (3" to 4-1/4" dia.)
Onions, raw, 1 large
*Cumin seed, 1 tbsp, coarsely crushed
Butter, salted, 0.25 cup
Parsley,/cilantro 2 tbsp
Green Peppers (bell peppers), 0.5 cup, chopped
Salt, 1 tsp
Pepper, black, 1 dash
Garlic, 1 tsb
eggs, 4 large
Directions
Peel and cut potato in half lengthwise, again cut through the centre lengthwise, and thinly slice .
Peel and thinly slice the onions. In a large nonstick fry pan, put the butter and the onions, green peppers, garlic, cummin seed and fry until onion changes colour and texture. Add the salt, pepper and potato and cook covered on low flame for almost 4-5 minutes, until the potato is done. Sprinkle with parsley or cilantro. Whisk the whites of the eggs until stiff, add the yolks and beat again. Pour over the cooked potato and cook covered until the egg is firm. Cut into large squares or triangular portions and serve.
