Spicy Beans and Barley Chili

Introduction

A hearty and very tasty one dish dinner. This should be a Vegan dish if you don't add the cheese on top. A hearty and very tasty one dish dinner. This should be a Vegan dish if you don't add the cheese on top.
Number of Servings: 2

Ingredients

    1 Cup cooked Barley
    1 Cup cooked kidney beans (white or red)
    1 Cup steamed mixed vegetables (Birds Eye Broccoli Florets , carrots and Water Chestnuts)
    1 Cup Boca Ground Burger (1 packet )
    Hot Pepper sauce to taste.
    Salt if desired.

Directions

Cook barley according to directions.
Steam the vegetables till tender but not mushy.
Mix together 1 Cup each of the barley, beans, vegetables and the Boca crumbles. Season with a little salt if desired. Add Pepper sauce to taste. I used about 1 tsp. of Harissa which is quite hot.

Heat the mixture for 2-3 minutes in the microwave on high.

If desired sprinkle a Tbs of shredded Parmesan over the top.

  • sounds delicious, but could the person who posted please reconsider the spelling? i had a hard time finding it because i was searching for "spicy", not "spicey".
    i'll have to do the recipe the old-fashioned way since i don;t have a micro, but we'll see how it goes! - 4/20/08
