Introduction

Ingredients

    16 oz. bag Dole shredded cabbage
    14 oz can Hearts of Palm, sliced
    10.5 oz can beets, rinsed well
    1/2 cucumber, diced
    1 cup sliced cherry tomatoes
    1 cup radishes, sliced
    fresh cilantro, to taste
    splash olive oil (for nutritional purposes, I entered 1 tsp, but used a little less in real life)
    juice from 2 limes
    splash balsamic vinegar (again, entered 1 tsp for nutritional calculation)

Directions

Put cabbage in bowl. Add all other ingredients and mix gently. Adjust amount of lime juice and balsamic vinegar to taste.


Makes 4 generous servings.
