IntroductionVery good with poultry. Good for serving a crowd, makes a large pan. Very good with poultry. Good for serving a crowd, makes a large pan.
1Â¼ cups wter
Â½ cup uncooked brown rice
Â½ tsp salt(may omit)
1/4 tsp dried basil
1/2 tsp black pepper
1 Tbsp vegetable oil
1 medium carrot, peeled and chopped
1 small zucchini, chopped
1 small yellow squash, chopped
1 small red bell pepper, seeded and chopped
2 green onions with tops, thinly sliced (1/4 cup)
Heat oil in large skillet on medium high heat. Add carrot, zucchini, yellow squash, red pepper and green onions. Cook and stir 5-7 minutes or until vegetables are heated.
Transfer rice to a serving bowl, add vegetables. Toss to combine and serve.
