Baked Eggplant parmesan

Ingredients

    1 eggplant
    1-2 cups of marinara sauce
    1 cup low-fat mozzarella cheese
    pam olive oil spray

Directions

Slice eggplant 1/4 inch thick leave skin on. Salt bothe sides of eggplant lightly to draw moisture. Place on a cookie sheet and spray with pam cooking spray, use a small amount. Bake at 350 for 15 min flip over and cook for 5 minutes, remove and top each piece of eggplant with a tablespoon of marinara sauce and divide 1 cup of shredded cheese between the rounds. Servings for 6-10, serve with salad.
