Easy Chicken Cordon Bleu

Introduction

I take this to pot luck dinners and alway get asked for the recipe. I used regular soup to calculate calories. I often use the 98 % fat free and we like it just as much. I used full fat cheese because I cannot get reduced fat swiss at my local store. I used 5 large skinless boneless chicken breasts and cut in half per serving. I really like roaster asparagus with this for a easy meal I just put the spears in for the last 15 min. Makes great left overs, and freezes well. Ingredients

    1 pkg Stove Top Stuffing Mix
    1 tsp Olive Oil
    5 Chicken Breast, no skin
    4 oz. Swiss Cheese
    7 oz Ham, extra lean
    1 can 10.75 oz Cream of Chicken Soup
    4 tsp Grey Poupon Dijon Mustard
    1/2 - 3/4 C water
    1 tsp Paprika


Directions

prepare stuffing mix with 1.5 cup water and 1 tsp olive oil, set aside. Place chicken breasts in 9 x 13 baking dish, top each with ham and 1/2 the swiss cheese. Using a fork to fluff the stuffing sprinkle on top of the cheese. Mix soup and 2 tablespoons dijon mustard and 1/2 to 3/4 Cup water, pour over stuffing. sprinkle with paprika and bake covered 30 Min @ 375, then uncover top with remaining cheese and bake 10 more min. uncovered. I serving 1/2 Breast.
