General Tso's Chicken

Number of Servings: 4

Ingredients

    ¾ cup ff chicken broth
    1 T cornstarch
    2 T Splenda
    2 T low sodium soy sauce
    1 T white wine vinegar*
    ½ tsp. ginger
    2 tsp. canola oil
    2 med. scallions chopped
    2 med. minced garlic
    ½ tsp. red pepper flakes
    1 pd. boneless skinless chicken cut into 2" pieces
    2 cups brown rice

Directions

1. In med. bowl whisk cornstarch, Splenda, soy sauce, vinegar, ginger, and broth and set aside.
2. Heat oil in wok.
3. Add scallions, garlic, and red pepper flakes cook 2 min.
4. Add chicken and cook until brown.
5. Add reserved sauce and simmer until thickens.
6. Serve over rice.

Serving size = 1/2 cup rice + 1/4 of the chicken
