Healthy Stir Fry for Two Healthy Stir Fry for Two
Number of Servings: 2

Ingredients

    2 servings of firm Tofu (2/5 of block)
    1 cup shelled, frozen Edamame
    1 bag of Trader Joe's Broccoli & Water Chestnuts in Mushroom Pepper Sauce
    Red Pepper Flakes (to taste)

Directions

Cook Edamame according to package (boil aprox 5 mins). Dice Firm Tofu into bite size squares. Cook Broccoli & Water Chestnut mix according to package (replace oil with cooking spray). Add Edamame and Tofu to Broccoli & Water Chestnuts in pan at beginning of package cooking instructions.
Spice to taste. Serves two (340 cals per serving).
