Heat oven to 375 degrees. Combine wwflour thru salt and stir thoroughly in medium bowl. In small bowl whisk eggs until foamy then add remaining ingredients and mix. Stir wet ingredients into dry until just combined. Fill muffin tins 3/4 full. Bake for about 20-25 minutes. Cool, and enjoy.
*Note: you could use another 1/4 cup apple sauce instead of oil and save more calories.
You could also sprinkle in wheat germ or ground flax meal for an added nutritional punch.
