Number of Servings: 6

Ingredients

1 Cup Orange Juice (I used OJ w/ Calcium and D)
    1 Tbsp Lemon Juice
    1 Packet Sweet and Low
    1/2 Tsp Cinnamon, Ground
    1/4 Tsp Ginger, Ground
    24 Prunes
    1/4 Cup Walnuts, Chopped

Directions

Put Orange Juice, Lemon Juice, Sweet and Low, Cinnamon and Ginger into a pot, mix and heat until just starting to boiling.
Add in Prunes and reduce heat to a simmer. Simmer for about 10 minutes until they plump up and soften, stirring occasionally.
Add the Walnuts and cook for another minute or two, stirring occasionally.
Remove Prunes and Walnuts into a bowl or Individual serving cups.
Turn heat back up on the sauce and reduce until about half it's original volume.
Pour sauce over the Prunes and Walnuts.

It can be served Hot, or allowed to cool in the fridge.

Recipe makes 6 servings. A serving size is 4 prunes plus an equal share of the Walnuts and Sauce.
