1 eggs, beaten (or 1/4 c eggbeaters) 3/4 cup skim milk 1/2 cup unsweetened applesauce 1 teaspoon vanilla extract 1/2 cup + 2 Tbls whole wheat flour 1/2 cup oatmeal 2 tablespoons wheat germ 2 teaspoons baking powder 1-1/2 teaspoons splenda or brown sugar splenda or brown sugar 1/8 teaspoon salt
In a large bowl, whisk together the egg, milk, applesauce, and vanilla. Beat in whole wheat flour, oatmeal, wheat germ, baking powder, cinnamon, sugar, and salt until batter is smooth. Preheat a waffle iron, and coat with cooking spray. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
I compromised the recipe by mistakenly adding in a TBSP of coconut flour. It still came out pretty nicely! The only other change was to use reduced sodium,aluminum free baking powder. Cinnamon is listed in ingredients if you push Makeover button- very nice!
This was wonderful!! I didn't have any wheat germ, and can only imagine how much better that makes it. The recipe was enough to make 7 regular sized belguim waffles. I would consider doubling it to feed more people or to freeze prepared waffles to reheat in the toaster for a later time! :) Thanks!!
