Cacciatore-style Halibut

Introduction

Add lots of flavor (but few calories) to your halibut or other white fish with cacciatore sauce. Add lots of flavor (but few calories) to your halibut or other white fish with cacciatore sauce.
Number of Servings: 4

Ingredients

    4 4-oz halibut fillets
    1 red bell pepper, sliced into strips
    1/2 yellow onion, sliced into strips
    1 clove garlic, minced
    1 tbsp capers
    1 can diced tomato
    Juice of one lemon
    3 oz white wine (pinot grigio or sauvignon blanc)
    1 tbsp chopped flat-leaf parsley
    1/2 tsp flour
    1 tbsp olive oil
    salt and pepper to taste

Directions

Preheat oven to 375 F.
Use 1/2 tbsp olive oil to grease the bottom of an oven-safe dish.
Season halibut with salt and pepper, then place in the dish.
Bake for 10-12 minutes. While the fish is baking, prepare your cacciatore sauce.
In a large saute pan, heat 1/2 tbsp olive oil.
Add the bell pepper, onion, and garlic and saute for about 5-7 minutes, or till the onions become translucent.
Add the tomatoes, capers, lemon juice, white wine and sprinkle the flour over the mixture and simmer for 6-7 minutes. By this time, your fish should be ready.
Top the fish with 1/4 of the cacciatore sauce and serve immediately.
