Introduction

Number of Servings: 16

Ingredients

    1 large sweet onion, diced
    1 large green pepper, diced
    4 oz package soy crumbles
    14 oz package lean soy sausage
    1 15.5 oz can black beans (drained)
    28 oz + 14.5 oz cans diced tomatoes
    1 15 oz can kidney beans (drained)
    2 tsp oregano
    1/2 tsp garlic powder
    1-2 tsp cayenne pepper
    2 tsp thyme
    2 tsp sea salt
    1/2 tsp American saffron (optional)
    2 Tbl parsley
    1/2 tsp cinnamon
    2 tsp brown sugar

Directions

Makes 16 servings

Saute diced onions and green pepper in a pan sprayed with cooking spray. When tender/crisp add soy crumbles and soy sausage. Stir occasionally as it heats through.

Spray a large crockpot with non-stick spray, Add the onion mixture and all of the rest of the ingredients. Stir. Cook on low for 4-6 hours.
