Tyler's Ultimate Meatloaf

Ingredients

    Olive Oil, 2 1tsp (remove)
    Garlic, 1 clove (remove)
    Onions, raw, 1 medium (2-1/2" dia) (remove)
    Peppers, sweet, red, raw, sliced, 1 cup (remove)
    Red Ripe Tomatoes, 1 cup, chopped or sliced (remove)
    *Ketchup, Heinz, 4 tbsp (remove)

    White Bread, 2 slice (remove)
    *Milk, 2%, 3 fl oz (remove)

    Egg, fresh, 1 large (remove)
    Bacon, 2 medium slices, cooked (raw product (remove)
    Ground beef, lean, 16 oz (remove)

Directions

The first set of ingredients makes a sauce for the top of the meatloaf and half goes inside the meatloaf. Saute your garlic (you can add 2 cloves if you like more garlic) onions, red or green peppers in a little olive oil and then add tomatoes and I forgot to list WORSTERSHIRE SAUCE (1 TBS) and your Ketchup (about half a cup) together. I saute onions and peppers first til soft and then add in the rest.

While these are sauteeing soak your white bread in the milk

add the bread of which the milk has been squeezed out with your egg (I add 1 to save calories but you can add 2) and about half of the sauce mixture with salt and pepper to taste, some fresh parsley and fresh thyme. Mix every thing together well and shape into a loaf. I cut the 2 bacon slices in half and lay on top of the meatloaf. Bake at 350 degrees for an hour to an hour and a half til well done. After it cooks for a half hour pour the rest of the sauce over the top. It is delicious meatloaf.
