IntroductionAn entree salad with "wings" An entree salad with "wings"
1 boneless, skinless chicken breast (approximately 8 oz.)
1 teaspoon extra virgin olive oil
1 teaspoon Louisiana hot sauce
6 cups chopped Bibb or Romaine lettuce
1 cup chopped celery
2 ounces blue cheese
4 tablespoons fat-free Ranch dressing
While chicken is marinating, chop lettuce and celery and divide evenly into two large individual salad bowls. Crumble 1 ounce of blue cheese onto each salad. Pour 2 tablespoons of fat-free Ranch dressing over each salad and toss well. Set aside.
Transfer chicken and marinade to a non-stick skillet and saute over medium heat until chicken is thoroughly cooked and very lightly browned. Remove from heat and divide chicken evenly between the two prepared salads. Serve immediately.
Makes 2 large (entree-sized) servings.
