Down2Sexy's Buffalo Chicken Salad

Ingredients

    1 boneless, skinless chicken breast (approximately 8 oz.)
    1 teaspoon extra virgin olive oil
    1 teaspoon Louisiana hot sauce
    6 cups chopped Bibb or Romaine lettuce
    1 cup chopped celery
    2 ounces blue cheese
    4 tablespoons fat-free Ranch dressing

Directions

Trim visible fat from chicken breast and cut into bite-sized pieces. Whisk together olive oil and hot sauce. Place chicken in a non-reactive bowl and pour olive oil mixture over. Toss to coat evenly. Cover and refrigerate for a minimum of 20 minutes. (Chicken can be marinated up to 12 hours in the refrigerator. The longer it marinates, the more flavorful it is.)

While chicken is marinating, chop lettuce and celery and divide evenly into two large individual salad bowls. Crumble 1 ounce of blue cheese onto each salad. Pour 2 tablespoons of fat-free Ranch dressing over each salad and toss well. Set aside.

Transfer chicken and marinade to a non-stick skillet and saute over medium heat until chicken is thoroughly cooked and very lightly browned. Remove from heat and divide chicken evenly between the two prepared salads. Serve immediately.

Makes 2 large (entree-sized) servings.
