3 egg whites
1 tsp cajun seasoning
1 Tbsp olive oil
1 Tbsp chopped onion or green onion
1 Tbsp chopped/sliced green or black olives
2 oz thawed/ raw spinach
1 Tbsp chopped fresh tomato
1 oz crumbled Feta cheese
1 slice toasted whole wheat 7grain bread
Add the cajun seasoning and spinach to the whites and whisk for 30 seconds.
Chop/dice onions, olives and tomatoes.
Heat olive oil in omlete or small frying pan and add onions, olives, tomatoes. Saute until onions are transparent.
Add egg white mixture and dont touch until the whites begin to form/harden.
Add feta cheese and cook until your omlete is done.
Toast your bread to desired doneness and enjoy!
Makes 1 serving of a large scrumptious omlete and glorious bread. This dish will keep you going till lunch!
