Indonesian Coriander Honey Ginger Chicken

Introduction

The name says it all. I found this on Cooking Light. Made some extra sauce and served it over rice. DELISH! (the orig. recipe called for chix thighs but I used breasts instead) The name says it all. Ingredients

    Peanuts, dry-roasted, 1.5 tbsp
    Ginger Root, 2 tsp (bottled and minced)
    Garlic, 6 cloves
    Low sodium soy sauce, .33 cup
    Dried Coriander 1 tbsp
    Honey, 1 tbsp
    Asian Chili Paste, 1.5 tsp (
    2 Chicken Breast, no skin, 10 ounces

Directions

Place first 3 ingredients in a food processor; pulse until minced. Add soy sauce, coriander, honey and chili paste. Process until smooth. Place marinade in large bowl; add chicken and toss to coat; Chill 10 minutes.

Remove chicken from marinade and place on a foil lined baking sheet. Broil 6 minutes on each side or until done.

I heated up the extra marinade and made sure I boiled it through. I served the marinade over rice and topped it with the chicken.

A definite keeper.
