IntroductionSimple, light. Salmon steamed, tuna, crab, shrimp can be substituted or mixed. Serve with tomatoes and whole wheat grain. 1-2 servings Simple, light. Salmon steamed, tuna, crab, shrimp can be substituted or mixed. Serve with tomatoes and whole wheat grain. 1-2 servings
steamed salmon (any water packed or steamed seafoods--tuna, crab, baby shrimp, seabass)
cucumber english, diced (or seeded & diced cuke)
poppy seed dressing (soy-mayo or yogurt)
Variation1: Ok with soymayo instead of poppyseed dressing. Add lemon juice.
Variation2: Also ok with plain yogurt flavored with dill.
Variation3: Ok without seafood. Added scallions.
Steam salmon (or leftover). Set aside to cool. Flake when cooled.
Dice into 1/4" cubes english-type cucumber with peel.
Combine remaining ingredients for the dressing. (salt & sugar, poppy seed are optional or add lightly to taste; or moisten with soy mayonnaise and poppy seed.) Chill.
