1 cup (not packed), non fat cottage cheese 2 cups egg substitute, liquid (Egg Beaters, or whites) 1/2 cup broccoli, cooked, chopped 1/2 cup ham, extra lean, (5% fat), diced 1/2 cup Cheddar or Colby Cheese, Low Fat, shredded Salt & Pepper, to taste Cooking Spray
Preheat oven to 375.
Mix all ingredients in a large mixing bowl. Pour into a pie dish sprayed with Pam or other cooking spray. Place on cookie sheet in oven. Bake approximately 45 minutes or until center is just set.
Makes 6 servings.
Variations: Substitute different meats, cheese, and veggies such as: turkey bacon, sausage reduced fat swiss, mozzarella, or feta spinach, peppers, onions, asparagus

These are great. I made them in muffin tins so they were convenient while traveling. I used about 1/3 c per muffin and baked them for about 28 minutes. Next time I'll spray the paper liners as they tended to stick.
Great recipe. Loved it. Made the mistake of using a cup 2% milk without thickening it and there was some moisture left after cooking it for 15 min longer. Hubby still loved it, even suggested making it in muffin cups for breakfast on the run thru the week. Will do this tomorrow per recipe.
I like this recipe better than frittatas, as the process of putting the frittata under the broiler changes the flavor of the dish. Add a little nutmeg to this recipe and it is as good as any quiche recipe with crust and cream. Mine: asparagus, Buche de Chevre, & Nicoise olives - Yum!
Very easy, and very delicious! I didn't have cottage cheese on hand, so I used skim milk with a little flour as a thickener. Next time I'll use the cottage cheese, but it came out GREAT even without it!!! Yum!!!
I made this using egg whites + 3 whole eggs( I was afraid I was going to run out of egg whites, plus I have a thing about the color,don't ask also used turkey ham. It was delicious. My hubby loved it
Very good and very easy. I made in mini muffin pan to have bite-size snacks when I need them. I used Spinach, Onion, Ham, Colby, Cottage Cheese - excellent. Makes alot of mini- quiches - great for appetizers too.
Last night I visited a friend in the hospital. She goes home today and has to restrict her carbs to 4 per meal, which sounds impossible to me. However, this sounds really good, and I plan to make it for her.
Excellent and easy and tasty. I added some sauted onions, celery and bell peppers. This is a great base recipe as the broccoli could be a number of other veggies; cheddar could be another kind of cheese, etc. Will definitely make again!
Mmmmmm! Just made this with a crust made of 1 1/2 cups ground blanched almonds, 1/2 cup grated parmesan, a generous scattering of Herb de Provence and about a 1/4 cup of Yoghurt butter. I pressed this into the quiche pan and let if bake while I mixed the filling. Super!
Made this today and it was great. Will definately make this again. DH liked it also. The only thing I did diffferent was, I had no ham so I chopped up some low fat turkey (sandwich) slices and put in place of ham. It was GREAT.
Um, i have been baking this now going on 70 minutes because the center is so runny. After 45 min and the edge turning brown i reduced heat to 325 and baked 15 min more and after another 15 took it out of oven. Guess i should've stuck with lined muffin pan like last time.
This was very good - i did my own interpretation of add ins. I used 1can chopped green chilis, red onion, green bell pepper, hot chicken sausage (2 links removed from skin and browned) and cilantro. I cut my quiche into 1/8 wedges and added 2T of Salsa. The cals are the same and love the SW flavor.
I made this and a Tofu Quiche. Both were good but this one the winner! So very very quick & easy to make. Did reduce the cook time and temp though. (350 for 40min and it was done, golden, & gorgeous.) I love that you can switch it up with other vegetables too. Thanks CHESSMANS2000
Very tasty dish. I used asparagus as my vegetable, and used feta and sharp cheddar cheeses. The dish was a bit runny after baking, so next time I think I will cut the cottage cheese down to 3/4 cup. My husband likes spicy, so I also added a liberal dash of cayenne pepper.
