Lemon Chicken Stir-Fry

Number of Servings: 6

Ingredients

    1 cup fresh broccoli florets
    1 meduim carrot coarsley ch opped
    1 tsp. ginger
    1 cup of onions sliced
    juice of 1 lemon
    1 lb of boneless skinless chicken breast halves, cut into pieces
    2 cups of water
    2 packages of chicken flavor ramen noodles

Directions

Heat Stir fry skillet over meduim heat until hot. Spray with cooking spray to coat. add chicken and stir fry 3-4 minutes. Add ginger and stir. Add water and bring to a boil. Add noodles broken into pieces and seasoning packets. Brong to a boil; reduce heat. Add broccoli and carrot and simmer 3 minutes or until noodles are done and most of liquid is absorbed. Add onions and lemon and heat through. Serve immediatley.
