Easy Faux Chicken Pot Pie


This is an quick and easy version of chicken pot pie This is an quick and easy version of chicken pot pie
Number of Servings: 12


    3 chicken breast, boneless/skinless, cooked and diced
    3 10oz pkgs of frozen mixed vegtables
    4 cups chicken broth
    1/2 c flour
    1 pkg prepared buscuits, cooked
    1 tbsp thyme
    1 tbsp rosemary
    1 tsp garlic powder
    salt and pepper to taste


Place frozen vegtables into cook pot with 3 cups of chicken broth, heating until hot, appx 15 minutes. Add cooked and diced pieces of chicken, as well as spices. Mix and simmer for 5 minutes. Take remaining 1 c of cold chicken broth and mix with 1/2 c of flour, mixing until no lumps present. Turn heat up on cook pot, until contents at a boil. Strain flour/broth mixture into pot containing veggie mix and chicken, lower heat, stirring constantly until liquid is thickened. Serve 1 cup of mixture over a cooked buscuit and enjoy. Makes appx 6 1 cup servings.
