Introduction

We have some excellent salads, but they are too big for just my use..so this is one that is cut down from the Recipe of VALERIEHASH. I also don't usually have fresh parsley on hand..do add it if you have it. Number of Servings: 5

Ingredients

    3/4 c water
    1/2 c plain cous cous
    1 large roma tomato diced
    1 large slicing cucumber diced
    1/2 red bell pepper diced
    1/2 green bell pepper diced
    lemon juice about 2 tsp
    1 tsp Sesame oil
    1/4 tsp sea salt
    1/2 tsp fresh ground black pepper
    1 tsp Mrs. Dash Tomato/Garlic Mix
    1 tbsp chopped onion
    parsley if you have it

Directions

Prepare the cous cous and set aside. Chop and add all the fresh veggies, spices, and lemon juice etc. This is where the time comes in--how fast can you chop -- that's your prep time ! Stir thoroughly. Refrigerate for 1/2 hour to blend flavors. Usually keeps a couple of days for me.

This will make just under 5 one-cup servings. Add a couple bunches of parsley and it will be a generous 1 c serving.
