Taco Pie

Number of Servings: 6


    4-taco size flour tortillas
    1-can fat free refried beans
    1-10oz can Chicken or 1 large chicken breast
    1-cup onion chopped small
    1 packet taco seasoning low sodium
    1/4-cup salsa
    2 Tbsp Tapatio (hot sauce) more or less to your liking
    1.5-cups 2% Mexican cheese blend
    1-Cup shredded Lettuce
    1/2-cup low fat sour cream
    1/2 cup diced tomato


Heat oven to 375. An lightly spray a pie pan with cooking spray.

While Oven is heating place tortillas on a cookie sheet to warm, check at five min or so to be sure they don't get crisp. You just want to warm them so they are easier to work with.(this can be skipped)

Heat beans in the microwave 2 min or so to warm up add 1Tbsp hot sauce, garlic powder, and onion powder, mix well.

On the stove heat chicken and onions until the onions are cooked, if using raw chicken make sure the chicken is cooked through. Add the taco seasoning and follow the directions. Once the meat and sauce is simmering add salsa and 1 tbsp hot sauce.

To put it all together layer tortilla, beans, meat mixture and cheese on three tortillas. Reserve some of the sauce from the meat, put the last tortilla on top and cover with the reserved sauce and some cheese.

Bake at 375 for 20 min until it is bubbly around the edges.

Let stand about 5 min or so before you cut into 6 pie slices.

Top with shredded lettuce, tomatoes, sour cream and anything else you like on you tacos!
