Cornmeal Pudding

Number of Servings: 8

Ingredients

    5 tablespoons margarine
    1/4 cup masa harina (corn flour used to make tortillas)
    1/3 cup white sugar
    1 can creamed corn
    1 cups frozen corn, thawed or 1 cup canned corn, drained
    1/2 cup cornmeal
    1 teaspoon baking powder
    2 Tbsp non-fat milk

Directions

1. In a medium bowl, mix together the margarine, masa flour, and sugar until light and fluffy.
2. In a food processor or blender, blend creamed corn with cornmeal until smooth. (you can also use 1 cup canned or frozen, thawed corn, but add about 1/2 cup of water.) Stir into the masa mixture.
3. Mix in the remaining corn, baking powder, and milk. Pour into a small microwave safe dish.
4. Microwave the batter for 4-8 minutes. Stir every minute
5. Texture should be moist, but not runny. Keep microwaving or cut back on time to get the right consistency.
