Exotic Pilaf

Ingredients

1/4 c channa dal or yellow split peas
1/4 c wheat berries
1/4 c pearled barley
1 cinnamon stick
1 can chicken broth
6 dried apricots chopped
1 Tb butter
1Tb olive oil
1 c kohlrabi diced
1c carrots chopped
4 Tb shallots
3 Tb sliced almonds toasted
salt and pepper to taste
Directions
Place cinnamon, barley, wheat berries and channa dal in a rice cooker and cover with water by about an inch. Cover and microwave 8 minutes, open steamer and skim off any foam. Cover and keep cooking untill almost tender, add broth and apricots and cook untill most of the liquid is absorbed.
In a large skillet melt the butter and add the shallots and cook a few minutes then add the chopped carrots and kohlrabi. Cover and cook untill tender, stirring a few times. Add grain/bean mix, toasted nuts, olive oil, salt and pepper. Stir and serve.
