Breaded Baked Vegis

Introduction

This is great for families that love fried foods but that are trying to cut back on fat. These are baked but reminded me of fried vegis. Made me feel guilty until I looked at the calories. This is great for families that love fried foods but that are trying to cut back on fat. These are baked but reminded me of fried vegis. Made me feel guilty until I looked at the calories.
Number of Servings: 6

Ingredients

    1/2 cup reduced-calorie Mayonnaise
    1/4 cup finely chopped onion
    1 tablesponn Dijon Mustard
    4-5 cups of assorted cut-up fresh vegetables
    1/2 cup of Italian seasoned dry bread crumbs
    1/4 cup freshly grated Parmesan cheese

Directions

It could be any vegetables such as broccoli, cauliflower, carrot sticks, small mushrooms, bell pepper striips, yellow squash or zucchini slices.

Cut up the vegetables into bit size pieces.

Mix the mayonaise, dijon mustard, and onions in a bowl. Mix well.

Mix bread crumbs and Parmesan cheese into a large ziplock bag.

Then coat all vegetables in the mayo, mustard, onion mixture and then add it to ziplock bag and coat completely.

Put it on a pan one layer thick and bake 10 minutes until golden brown.
