Old Fashioned Red Potato Salad

Introduction

This is a lower calorie, lower fat potato salad - your friends and family will never be able to tell the difference, it's that delicious! People request that I bring this salad to picnics all summer long - they have no clue it's a healthier version. People request that I bring this salad to picnics all summer long - they have no clue it's a healthier version.
Number of Servings: 10

Ingredients

    9 cups cubed red potatoes
    1/2 cup sliced green onion
    1/2 cup diced celery
    3/4 cup low fat sour cream
    1/3 cup low fat canola mayonnaise
    1/4 cup fresh dill weed, chopped fine, or use about 2 tsp. dried dill weed
    1 tsp. sea salt
    1/4 tsp. black pepper
    3 hard boiled eggs, sliced
    1/4 tsp. paprika

Directions

Cook cubed red potato about 8 minutes or until tender - be careful not to over cook! Drain and place in a large bowl. Add onion, celery and toss gently.

In a separate bowl add sour cream, mayonnaise, dill, salt and pepper. Stir well to combine then pour over potato mixture and toss gently.

Lay sliced eggs on top of potatoes then sprinkle with a bit of paprika for beautiful color.

Chill several hours. Makes 10 one cup servings.

You can also chop the egg and add into the salad if you prefer.
