Introduction

I got this recipe from Food Network and altered it some - doubling the bread crumbs, adding fresh herbs and using turkey breast instead of mixed ground turkey. Number of Servings: 31

Ingredients

    1 medium onion, grated or pulsed (keep juices)
    3-4 cloves garlic, minced or grated
    1 egg
    1/2 cup italian bread crumbs
    3 tbsp ketchup
    1/2 cup parmesan cheese, grated
    1 tsp salt
    1/4 tsp black pepper
    A few red pepper flakes
    1 tbsp fresh basil
    1/2 tbsp fresh oregano or thyme
    1 pound ground turkey breast

Directions

Makes 31 1oz meatballs (before cooking)
Mix all ingredients but turkey together, and then add turkey.
Make into small balls.
Saute in olive oil in large pan, or you can bake or broil them.
