Cream of Mushroom Chicken

Introduction

I got this recipe from Allrecipes.com and hope to make it less fattening in time. I wanted to make it the first time to "try" it and see if the family would eat it, and it's really good, but now I need to make substitutions with fat-free soup. I wanted to make it the first time to "try" it and see if the family would eat it, and it's really good, but now I need to make substitutions with fat-free soup.
Number of Servings: 4

Ingredients

    2 tbsp. butter
    1 (10.75 oz.) can of Condensed Cream of Mushroom soup
    12 oz. (can) evaporated milk
    1 cup onion, chopped
    1 lb. boneless chicken breast, cut in bite-size pieces
    1 cup sliced fresh mushrooms
    Salt and Pepper to taste

Directions

1. Melt butter in a large saucepan and add soup and milk.
2. Add onion, salt and pepper and bring to a boil.
3. Cut chicken into bite-size pieces and add to pan.
4. Bring to a boil and then simmer for 30 minutes or until chicken is cooked.
5. Boil noodles or rice to accompany the chicken (optional).
