2 2/3 cups unprocessed wheat bran
2 cups boiling water
3 egg whites
1 cup apple sauce
1 1/2 cups skim or low fat soy milk
2 cups whole wheat flour
2/3 cup soy flour
4 tbs baking powder
Spoon into muffin tin sprayed with cooking spray or lined with muffin cups. Bake in preheated 400 degree oven for 15-20 minutes, or until toothpick comes out clean.
These freeze well and can be thawed or reheated in the microwave.
Makes 24 muffins.
They are very flavorful as is, but you can add different flavorings with fruit, nuts, seeds, spices or extracts. You can also substitute most of the milk with flavored yogurt.
