1Â½ lbs boneless, skinless chicken breast halves
1 tsp finely chopped ginger root
2 loves garlic, minced
1 tsp coarsely ground black pepper
1 tsp organic olive oil
1 Tbsp fresh lemon juice
In a wok or vry large nonstick skillet, cook and stir chicken in hot oil over medium high heat for 5 minutes. Reduce heat to medium low. cover and cook 4-6 minutes more or until chicken is no longer pink (165Â°F), stirring occasionally.
Transfer to a platter and drizzle with lemon juice.
Makes 6 servings.
