Ingredients

60g butter
2 tbls plain flour
1 tsp ry mustard
1 cup low fat milk
1/2 cup low fat cream
1/2 cup grated low fat tasty cheese
440g can red salmon, drained
1 cup frozen peas, thawed
Directions
Melt butter in large saucepan (or microwave on high for about 1min). Stir flour and mustard into pan, cook, stirring over medium heat, for 2 minutes (or microwave on high for about 1 minute). Gradually add milk and cream to pan, stir constantly over heat until mixture boils and thickens (or microwave on high for about 4 min.) Add cheese, salmon and peas to sauce, stir over low heat until mornay is heated through (or microwave on high for about 3 min.) Seves 6 served over rice.
