Ingredients

    1 package sliced mushrooms
    1 medium onion, diced
    2 cups diced sweet potatoes (peeled)
    one acorn squash, diced
    1 can diced tomatoes, juice reserved
    4 cloves garlic
    1.5 cups uncooked wild rice
    1 tsp black pepper
    4 cups 99% fat free chicken broth

Makes 8 servings (2 cups each)

1. Preheat oven to 350 degrees
2. Combine all ingredients in large casserole dish
3. Bake for 1 hour and 15 minutes or until sweet potatoes and acorn are tender

  • This was great! My husband even liked it and he does not like sweet potatoes. I added ginger and a little curry for extra kick. And the bake time was about 35-40 minutes longer than instructed. - 3/22/10
