Introduction

Had this at a cook out, loved it! Did some searching after asking the cook how he made them, and found the recipe on Rachael Ray's website. So yummy, fast, and healthy! Ingredients

One 15-ounce can chickpeas, rinsed and drained
One 4-ounce can diced green chiles
2/3 cup packed flat-leaf parsley leaves
    2/3 cup bread crumbs
    Salt and pepper

    1 large egg, lightly beaten
    4 whole wheat hamburger buns
Dijon mustard, or ketchup for serving

Directions

1. In a food processor, pulse the chickpeas, green chilies and parsley until finely chopped. Transfer the mixture to a medium bowl and stir in the bread crumbs and salt and pepper to taste. Stir in the egg and form the mixture into 4 patties, each about 2/3 inch thick.
2. In a large skillet or grill pan set at medium-low heat, spray with cooking spray. Cook the burgers for 4 minutes, then flip and cook for 3 minutes more. Serve the burgers on the hamburger buns with mustard, or ketchup. Enjoy!
