Pasta Salad

Ingredients

    1 lb. package Healthy Harvest Pasta, Rotini
    1 package dry Italian Dressing mix
    1/2 cup red wine vinegar
    2 Tablespoons Olive Oil
    1 cup chopped red onion
    1 cup chopped red tomato
    2 large cucumbers, chopped
    1 cup brocoli, chopped
    1 cup carrots, chopped

Directions

Cook the pasta, drain and set aside to cool. Place the chopped vegetables in a large mixing bowl. Mix the dressing in 1/2 cup of red wine vinegar, add olive oil and pour over vegetables. Stir in cooled pasta and chill one hour before serving.

  • I fixed this years ago but someone threw out my recipes when they helped me move and I couldn't remember what went in it. I don't care for the onions but you can pretty much mix in whatever vegetables you like. I mix all this in with fettucini noodles and it is delicious (and I'm a picky eater) - 4/28/08

  • recipe sounds so good I'm not sure I can get 10 servings out of it. I'll mke it next time it is hot here & hope I can keep from eating to much. lol - 4/27/08
