Ingredients

    1 can fava beans, drained and rinsed
    2 cups cherry tomatoes, quartered (or two large ripe tomatoes, diced)
    1/2 cup parsley, chopped
    1 cup onions, chopped
    2 tbs olive oil
    juice of one lemon
    1 tsp cumin

Directions

Cobine all ingredients in bowl, chill and serve

  • Who would have guessed that a fava bean can taste so good? I made the salad without the olive oil and it still tasted great. I don't know why the calorie content is so high, a half a cup of fava beans is only 100 calories.
