IntroductionDelicious roasted chicken, stuffed with oranges and lemons. Delicious roasted chicken, stuffed with oranges and lemons.
1 tbsp. dried rosemary, dived
1/2 tsp. paprika
1/2 tsp. salt
1/4 tsp. ground black pepper
1 whole chicken (4-5 pounds)
1 lemon, cut into quarters
1 orange, cut into quarters
Combine half of rosemary with paprika, salt and pepper in small bowl. Set aside.
Remove and discard giblets and neck from chicken. Rinse chicken with cold water and pat dry. Brush inside chicken with oil and sprinkle extra rosemary. Place lemon and orange quarters inside chicken. Tie legs together and tip wings up toward neck and tuck under back of chicken.
Brush outside of chicken with oil, coat completely with seasoning mixture.
Spray roasting pan with non-stick spray, place chicken in pan, cover and bake in pre-heated oven for 60 minutes. Remove cover, continue baking for 25 - 35 minutes, or until thermometer reads 180 degrees.
Remove chicken from roasting pan and let stand for 10 minutes before carving.
