Southwest Chipotle Crockpot Chicken

Introduction

This is a great easy crockpot meal. I have found other recipes similiar but they call for cheese and I prefer the sour cream too cool things off and save the fat and calories. Also instead of taco seasoning I added the Mrs. Dash to lower the sodium and the flavor is great. This is a great easy crockpot meal. Number of Servings: 4

Ingredients

    Chicken Breast, no skin, 1 lb
    *Baked Potato, with skin, 4 medium sliced thin
    Salsa, 1 cup
    Mrs Dash Southwest Chipotle, 1 1/2 tsp
    *Daisy Light Sour Cream, 8 tbsp

Directions

Layer sliced potatoes in the crockpot. Place chicken breasts on top. Sprinkle Mrs. Dash over chicken and potatoes. Pour the salsa over chicken. Set crockpot on low setting a cook about 7 hours. When done add 2 TBS of sour cream for each serving and enoy.
