Minestrone Soup

Ingredients

    30oz nonfat refried beans
    30oz can chopped tomatoes
    splash olive oil
    1 small chopped cabbage
    2 quarts water
    1 cup macaroni
    Italian seasonings, salt and pepper to taste
    2 medium onions
    2 garlic cloves
    1 leek
    4 celery stalks
    1 bunch parsley

Directions

In large pot mix beans, tomatoes, chopped cabbage, water and seasonings. Heat on medium high. In pan, saute onions, garlic, leek, celery and parsley in olive oil, add to stock pot. Add seasonings and simmer for 45 min. Add macaroni and cook until pasta is soft.
makes 3 quarts or 16 1-cup servings
