Simple Tofu Salad

Introduction

This recipe evolved from one my mother used to make. It is a nice replacement for egg salad. It is delicious with tomato and alfalfa sprouts. This recipe evolved from one my mother used to make. It is a nice replacement for egg salad. It is delicious with tomato and alfalfa sprouts.
Number of Servings: 6

Ingredients

    1 firm block tofu, very well drained
    1/3 cup plain, fat free yogurt
    1/4 cup fat free sour cream
    1 tablespoon yellow mustard
    1/2 cup celery, finely chopped
    1/4 teaspoon cayenne pepper
    1/4 teaspoon garlic powder
    1/2 teaspoon onion powder

Directions

Drain tofu very well. I literally squeeze the water out by hand but you can put it in a towel between heavy books for around 45 minutes. Then crumble it finely in a bowl. Add the rest of the ingredients, mix well. Chill for several hours. The longer it sits the better the flavor. Use as you would egg salad.
