Chewy Peanut Butter Granola Bars

Introduction

I tend to prefer whole or homemade foods, and could not find an equivelant recipes for "store bought" granola bars. After some experimenting, and calorie crunching I came up with this little dity. Number of Servings: 18

Ingredients

    1 cup peanut butter, creamy
    1/4 c. honey
    1 large egg
    1 tsp. vanilla extract
    3 cups quick-cooking oats
    1 cup raisin bran, crushed
    1 tsp. baking powder

Directions

1. Preheat oven to 375 F. Spray a 13x9 pan with non-stick cooking spray.

2. Cream together peanut butter and honey with an electric mixer, about 1 min. Add honey, egg, and vanilla, and mix for another minute. In a seperate bowl combine oats, crushed raisin bran and baking powder. With mixer on low or with wooden spoon, stir oat/bran mixture into peanut butter mixer until thoroughly combined.

3. Pour mixture into prepared baking pan and using hands, press mixture into the bottom of pan making it come to the edges and as thin as possible.

4. Bake in preheated oven for 10 minutes, or until edges are lightly browned.

5. Cool for 5 minutes. Gently score into 18 2"x3" or 1"x4" bars. Allow to cool completely in pan before removing.

6. Store in airtight container.
