goan style curry paste

Ingredients

    2 onions chopped
    6 cloves of garlic
    4 tables spoons vegetable oil
    8 red tia chiles, seeded and chopped
    2 tsp cumin
    2 tsp cardamom
    1 tsp cinnamon
    4 tsp turmeric
    4 tsp ground coriander
    1 tsp ground cloves
    4 tsp black pepper
    4 tbsp paprika
    two 4 inch pieces fresh ginger, peeled grated
    1 cup red or white wine vinegar

Directions

in a small sate pan, cook onion garlic and oil over med heat, for about 7 min, unitl onion is soft. Add chiles cumin, cardamom cinnamon turmeric coriander, cloves, peper paprika and ginger, cook and stir for 3 min. pour in vinegar and remove from heatl.
Let cool, then puree in a blender for 1 min until smooth. Transfer to a container and store in the refrigerator. It will keep for several months.
When you are ready to eat mix 3 tbsp of past with one can of lite coconut milk
Use with shrimp, fish, chicken, tofu, beef, anything tastes really good with this.
