Homemade Chicken Noodle Soup

Introduction

This recipe is great for lunch groups. It is also low in sodium, calories, and high in protein for those of us who need to watch our sodium intake. This recipe is great for lunch groups. It is also low in sodium, calories, and high in protein for those of us who need to watch our sodium intake.
Number of Servings: 12

Ingredients

    2 boneless, skinless chicken breasts
    1.5 cups carrots, strips or slices
    2 stalks celery, strips or slices
    .5 cup onion, diced or thin slices
    1 cup chicken broth
    3 cups water
    1 tbsp Extra Virgin Olive Oil
    2 tbsp Poultry Seasoning
    1 tbsp white or black pepper
    2 cups Enriched Egg Noodles

Directions

Cut chicken into strips or cubes, then lightly brown in Olive Oil. When chicken is brown add chicken broth, water, and vegetables. Bring to a boil. Boil until carrots are softened ( approx. 10 minutes). Reduce heat, add the noodles and seasonings. Simmer for 20 - 30 minutes.
Makes 12 1 cup servings.
This recipe also freezes well.
