Dreamy Chocolate Fudge



Introduction

Ingredients

    1 1/2 cups sugar substitute
    2/3 cup evaporated 2% milk
    2 tablespoons stick butter
    1/4 teaspoon salt
    2 cups miniature marshmallows
    1 1/2 cups semi-sweet chocolate chips
    1 teaspoon vanilla

Directions

1. Combine sugar substitute, evaporated milk, butter and salt in a medium size heavy saucepan. Bring to a full rolling boil over medium heat, stirring frequently. Boil and stir 5 minutes. Remove from heat.
2. Stir in marshmallows, chocolate chips and vanilla until completely melted and smooth. Pour mixture into foil-lined 8-inch square pan. Refrigerate at least 2 hours or until firm to the touch. Remove foil from pan and fudge. Cut into squares. Refrigerate any remaining fudge

Makes 50 servings.

    I am puzzled; thought the idea of Spark was to encourage alternatives to our sweet cravings which were themselves healthy. This seems full of "empty" colories. If you like it one square wont satisfy. How about a chunk of pineapple dipped in dark chocolate? Both good for you. - 2/18/09

    I'm new to Spark and thought I was doing something "clever" when I did this recipe on my own just last month. I tried dark chocolate chips instead of semi-sweet, but it didn't set as well. Yummy, anyway!! I will definitely make this again and again! - 1/13/09

    I made this fudge this morning. I used splenda and it turned out wonderful. It is very good. You have to follow the instructions and stir it constantly. I also put almonds on top of it. - 1/13/09

    This sounds great. I love getting to a recipe after a few comments to try what other people have already learned. For those that complain the fudge never "sets" it's usually because it hasn't boiled long enough. Boil until a little makes a soft ball when dropped in water. - 10/4/08

    I followed the recipe to a T however, it stuck to the foil. I put it in the freezer to harden it up and I'm still trying to figure out to get the foil off. Next time, I'm going to use wax paper or spray the foil. - 7/20/08

    This fudge was delicious. I made it for Valentine's Day for my kids. I put the cut up pieces in Valentine's bags and gave as gifts instead of buying boxed chocolates. My kids loved it. They want more!! Will definitely make it again. I will substitute chocolate chips for peanut butter chips next!! - 2/18/08

    I tried this twice and both times it did not set up correctly as I had a terrible time removing it from the foil. It had the consistency of taffy, rather than fudge. What am I doing wrong? This seems to be such a simple recipe - 8/2/08

    This sounds pretty good. I plan to make it using REAL butter, and maybe substituting sea salt for the salt. If I can find evaporated skim milk or one percent. What to do about the marshmellows. I will get unsweet high coaco. with spenda or stevia - 1/16/08

    Don't waste your time or ingredients. The marshmallows didn't melt, so I put it back on the stove for a few minutes. Then it didn't set up. It was the consistency of taffy. The sugar substitute taste (which some people may not mind) was horrid. Eat a small piece of something delicious instead! - 1/13/09

    Flavor wasn't bad (but had a fake sugar aftertaste to me), but like someone else said, it had the consistency of taffy and had problems getting it off the foil. Think I'll just stick with regular fudge and learn not to overindulge. - 10/14/08

    First off I haven't tried this recipe. But I can't see how using sugar substitute and then stuffing it full of (90% sugar) marshmallows is good. I'm not sure the calorie count on it but Rachael Ray has a great 5 min fudge that sets up for me every time and there's no boiling or soft balls. Loved it! - 10/4/08

    This recipe sounds great. I'll add nuts because I love nutty fudge. more satisfying and takes longer to chew 1 piece. I also will use agave nectar instead of the other sweetners. This looks like a real winner. - 10/4/08

    It was so simple to make and it turned out with great texture. I removed the foil after it had only set for an hour and it came off pretty smoothly. The marshmallows didn't quite cover the aftertaste of Splenda but it still tasted great. - 8/16/08

    This was my 1st attempt at making fudge - turned out great! Granted, I used real sugar since I had no substitute so the calories went up, but it turned out. To those who say that many servings can't be had, you're just not trying hard enough, 1 inch pieces are easy to get from a 8x8 pan (64 total) - 8/4/08

    For those of you complaining of the 50 pieces in an 8x8 pan being unrealistic, here is some perspective: my better homes and garden cookbook has a fudge recipe that says it makes 64 servings, with an 8x8 in pan. I figure they must be putting each piece on it's side and cutting it in half or somethin - 7/1/08

    definitely going to try this..this would be perfect to stick in the freezer for those cravings..I'm diabetic, and if one would check the full info, each piece only has 4.2g per serving..That's less than alot of stuff diabetics are allowed..I always check the info per piece, not just look at ingreds. - 7/1/08

    I too like Peanut Butter so I htink that I will use Peanut Butter Chips instead. I think that you could also use agave nector in place of sugar or the substitutes. It is a natural kinda syrup made from a cactus. - 7/1/08

    I was thinking how on earth could this be only 38 calories and 2.2 g of fat with 2 STICKS OF BUTTER and 2 CUPS OF CHOC CHIPS?!?! But then I saw that it's 50 servings... 50 squares out of an 8x8 pan? An inch square of fudge is not much at all! - 1/13/09

    I haven't tried this yet either, but it sounds good, so I might, I agree that marshmallows with sugar substitute seems silly, and I know that most sugar subs turn bitter with cooking,but I think that Splenda. made with sugar, may be the exception, I've tried it in coffee, and it's fine with me.
