Ingredients

    2 pkg frozen chopped spinach, thawed
    2 egg whites
    1/4 C egg substitute (equal to 1 egg)
    3 T flour
    1 T margarine (fat free or vegan/vegetarian)
    1 C milk (almond breeze unsweetened)
    1 sm onion, chopped
    salt
    pepper

Directions

Squeeze the moisture out of the spinach and put it in a casserole dish. Mix the flour and milk separately, and pour over the spinach. Add the remaining ingredients and stir until completely combined. Cook at 375 for 30 minutes.

  • Use 1/2 c. egg beaters in place of egg whites, etc,. Imaddes some parnesean cheese mxed in & sprinkled some cheddar cheese on top. (also next time will use GF tapioca ). Very tasty - 11/21/12
