Red Dragon Pie

Introduction

Ingredients

    Aduki beans, canned, drained and rinsed
    1 tbsp oil
    1 onion, finely chopped
    8oz carrots, diced
    1 tbsp soy sauce
    Tomatoes, canned, diced, 1 can
    1 tbsp mixed herbs
    salt and pepper
    1 oz soya spead
    1 1/2lbs potatoes, peeled and boiled

Directions

Preheat oven to 180 C, 350 F or Gas Mark 4

Fry onion for 5 mins in a large pan. Add carrot and fry 2-3 minutes more. Add cooked beans.
Mix soy sauce, tomatoes, mixed herbs and seasonings together and pour over bean and veg mix. Bring to boil and simmer for 20 minutes, till flavours are well blended and liquid has reduced.
Then put in an ovenproof dish. Mash potatoes with the soya spread and spread over the bean & veg mix. Bake for 35 to 40 mins till potato topping is crisp and golden.

You can add extra veges if you like.
